Aging of wine:12 months in steel, 24 months in large oak barrels, 9 months in bottle

Characteristics: dry, supple, full, aromoas of vanilla, dried prunes and figs, blackberries
Recommended pairings: savory and gamy red meats. Also goes well with pasta and is wonderful with crusty tarts with prune or apricot preserves.

Note: By choice,we bottle our wines (our household tradition at the end of September each year, just before the harvest begins. The 2005 vintage was bottled on September 23th, 2008. After about 9 months of aging in the bottle, away from light and sound, the first bottles were released for sale in the spring of 2009. For the health and optimal flavor of this particular wine, we recommend that even after light transport, the wine be allowed to settle for a minimum of 15 days. It should be drunk at 18°-20°C and allowed to breathe for a few hours before drinking. As with all of our wines, we do not use artificial stablilizers at any point during the vinification process. Our wines are truly ALIVE, they are left to pursue their true and natural cycle of maturation, so when pouring, it is common to find some sediment at the bottom of each bottle. The rich natural composition of the grapes, along with the slow maturation process, continuing for all the years the wine is left to age in the bottle in the proper conditions, lead us to believe that this wine will continue to improve and can age for up to 15 years from the initial harvest date.
